Soft Pumpkin Oatmeal Cookies
Anyone else thinking about heading to the pumpkin patch already? I use pumpkin patch as an umbrella term including apple picking, tractor riding, and/or apple cider donut eating.
Oh and usually when we head to the pumpkin patch in the fall, its at least 100 degrees. It’s still just the best time of year for some reason, and I start getting little hints of the fall as early as late July.
Ok on to the cookies.
When I make cookies, you can pretty much bet they’re going to be full of chocolate chips. I would say adding chocolate chips to things is one of my hobbies. But these cookies are delicious without a chocolate chip in sight, how is that possible??
I’ll tell you how, its the comforting flavors of fall - pumpkin puree, warm spices, and chewy oats.
These cookies are subtly sweet, making them great for toddler snacks or even a quick breakfast.
